Two Nights of Tacos

Yes, I really had tacos two nights in a row. Mmm, tacos!

Last night's tacos had gardein beefless tips in them. I sauteed them in some lime juice and chili powder (I saute most tex-mex things in lime juice and chili powder) and then I just topped them with some diced tomatoes and olives. (Sorry about the bad pics - now that I have a new camera, I'll work on the bad food porn pics, really I will!)

But the kiddo didn't want a taco - she didn't even want to try a taco shell. So I got her a tortilla, some seitan we made the day before, some black olives (she loves black olives - sticks them on all her fingers, of course), and some corn.

For tonight's tacos, I used a base of refried beans (canned), tofu (pressed in the tofu xpress, sauteed in lime juice and chili powder, a la Moe's - we like Moe's, though it's no Chipotle), lettuce, tomato and olives. The kiddo actually tried a bite of taco and liked it! But she decided she'd rather eat the tofu plain though, so she got her dinner in separates as usual.

Yum, I love tacos! I haven't tried the gardein beefless tips yet but that's a great idea for tacos. I stuck black olives on my fingers when I was a kid too. lol :-)

Tacos are the best. Tacos for dinner every night! My daughter likes eating the olives off her fingers too :)
