Three Recent Easy Meals

It just isn't MoFo if I haven't gotten distracted by life and forgotten to post! As long as it stays better than the world's worst MoFo month from a few years ago where the kiddo had that weird blood issue and had to be in the hospital with an IV for three days! 

This is last night's dinner - Tempeh Tickle and Almond (Sunflower Seed sub) roasted cauliflower and peas. I'm really picky about tempeh recipes, and this is one of the few ways I really like it, and the kid loved it too! She wasn't crazy about the cauliflower but I thought the cauli was amazing. So yummy.

I found a new mustard-y tofu recipe and then proceeded to make some subs and totally missed the point of the recipe. I also used the corn bread recipe on the tub of corn meal, and it was too much flour and not enough corn meal. And mixed veggies, of course, cause the kid loves them.

Broccoli, Trader Joe's gluten free corn pasta with butter and nooch and herbs, and this pomegranate tofu recipe I make. I got the pomegranate molasses for one of Isa's recipes in Vegan with a Vengeance, but then I lazy out and just throw a few things together and make it my way.

I have some pomegranate molasses sitting in my fridge. God only knows why I bought them originally. Never used them.

That corn pasta is some of the best gf pasta around. I also like that it's cheap.

We need trader joes in the uk :( sulk ! I love cauliflower cooked that way too !!!
