Some Simple Meals

Here are some simple meals I've made lately.

I went rogue and ate some gluten - I really love gardein's beefless tips. So yums, even though all I did was sauté them a little bit.

Some oatmeal! I'm not too patient so I just microwave 1/2 cup of gluten free oats with a little over 1/2 cup of water. Then I added 1 tsp of ground flax, a chopped banana, 10 grams walnuts, 10 grams raisins, 1/4 cup soy milk, some cinnamon, and some salt. I'm trying to love oatmeal without brown sugar or maple syrup and this was yummy.

The kiddo really loves frozen mixed veggies. Weird, but whatever, right? With some leftover baked poatoes that I turned into homefries and some tofu I made. I pressed the tofu in my Tofu Xpress for about 2 days and then I baked it at 400º for about 20 minutes (I forgot to time it, but this is usually how long I bake things for at 400º) in a pyrex baking dish that I'd added 1 tbsp olive oil, 2 tbsp balsamic vinegar, and 1 tsp of a spice mix (I used Penzey's Mural of Flavor). I flipped the tofu and let it bake for about 10 more minutes.

That tofu looks especially good! And, yeah, your sweet kid has interesting tastes ;)
