New XGFX Waffle Recipe!

Apparently the kiddo sensed that I was posting about pancakes yesterday because she came out of her room this morning and asked for pancakes. As I said, the only flours I have are tapioca, soy, and besan, as well as some gf oats, so I had to say no to pancakes. She followed up by asking for waffles and I started to say no, but then I remembered the oatmeal waffles in Vegan with a Vengeance, and I decided to make up my own recipe.

1 cup gf oats
1/2 cup milk (I used soy, but whatever)
1 tbsp peanut butter
1 tbsp brown sugar
1 tsp chia seeds
1 tsp baking powder
1/4 tsp salt
1/4 tsp cinnamon
1/4 tsp vanilla

I started by pre-heating my waffle iron, and then I ground the oats in my food processor. I didn't get it as smooth as a flour, but I didn't need it to be. I put the ground oats into a bowl and added the rest of the ingredients and stirred. You could of course add something fun like raisins or chocolate chips, but my weird kiddo doesn't like fun things in her pancakes or waffles. Then I put half the batter in my waffle iron for 4 minutes (most waffles in my waffle iron take 4-6 minutes - do whatever yours likes). 

The picky kiddo said they were some of the best waffles I've ever made. Given that I used my gluten free magic mix to gluten free the amazing raised waffles from Vegan Brunch, I'm not sure she's right, but I sure do like the flattery.

Since I posted this in advance, I had the opportunity to make these waffles again, at the kiddo's request! This time I left out the cinnamon and vanilla, and I accidentally added 1 cup of soymilk, so I added an additional 1/2 cup of oats (not ground up). I gave the waffles another minute and they were even yummier!

Yum! Your rgf waffle recipe looks easy, and I have been eating gf oats so I have a bunch to use up!

Oooh we are JUST about to get a waffle iron -- perfect timing. Can't wait to try these :)
