From Taco Night to Taco Salad
I assume by now you've seen the awesomeness that is the Taco Cleanse? It is, without a doubt, the best sounding, most sensible, easiest to follow dietary cleanse there is. I frequently think that I could in fact eat tacos every single day and never get sick of them - there's so much greatness that goes well in taco form.
About a week or two ago, I was trying to think of another item to go with dinner when I found some cooked black beans in the fridge. I realize that my favorite bean recipes come from Terry's Viva Vegan so I used the black beans to make a tiny bit of the refried beans recipe, and the picky bean hating kid loved them.
Last night I remade the refried beans the correct way using the whole recipe, and they were amazing, and tacos for dinner are always a win.
Today I used the ingredients to make a salad, and I used the refried beans as the dressing - something moist to join the ingredients together. Super yummy, of course.
Here are some chickpea tacos I made a few weeks - months? - ago. I used the Peas and Thank You recipe. So good.
And my most eaten taco, the leftover scramble taco. I usually use some vegenaise and sriracha, but these had avocado.
