Foods We Love Lately

I'm pretty sure it's not artichoke season, but Food Lion has had these yummy gigantic artichokes lately. They're $1.87 most days, but given the size, worth it.

Things with red lentils. This recipe was taken from Madhur Jaffrey's World Vegetarian. I really need to use that book more - that woman is a genius. AND she was in one of my favorite episodes of Psych!

For some reason fixing artichokes scares me. I've bought them a time or two just to let them go bad. Glad to see you're enjoying them!

Artichokes, lentils, and tofu scramble. Yes, please!

My husband is half Indian. His mother gave me Madhur Jeffreys Indian Cooking cookbook, circa the early '80's. While not even vegetarian, it is a prized possession of mine with lots of great info and starting points. After all, everything is veganizeable, no? :)
