Country-Fried Tofu with Golden Gravy

Last night's dinner was based around some tofu I'd left in the Tofu Xpress for a day too long (3 days total maybe?). Whoops. I went looking through my cookbooks for a new marinade to try, but in Robin Robertson's "1,000 Vegan Recipes" I found a recipe called Country-Fried Tofu with Golden Gravy and I knew I had to eat it.

I made the tofu as directed but the gravy asked for unsweetened soy milk and soy sauce. Normally I would have subbed gluten free tamari for the soy sauce, but I only had regular soy milk (and we all know regular soy milk makes savory foods taste like vanilla) and no tamari, so I just left those two ingredients out and it was still awesome. 

The recipe seemed a little complex and involved, but it came together quickly and easily and it was really yummy - like the punk rock chick pea gravy but easier. (Wow, I need some of that.) I served it with leftover brown rice and mixed veggies and broccoli. Even the kiddo cleaned her plate - a miracle!

It's really great and so easy! I magically had exactly enough chickpeas for this (3/4 cup) after I made chickpea salad x 2.
