Sweet & Chewy Tofu

I made up another new tofu recipe! Now that I finally followed through and got a replacement part for my tofu press, I've had tofu pressing in my fridge most days. This makes it easy for me to just take out the tofu, prepare it, and cook it. 

Today I whisked together:

1 tbsp mellow white miso 
1 tbsp agave
1 tbsp tamari (you could use soy sauce, but I needed gf tamari)
1/2 tbsp maple syrup 
1/2 tsp spicy brown mustard
1 tsp Penzey's Mural of Flavor (spices, shallots, onion, garlic, lemon peel, citric acid, chives, orange peel)

I sliced the block of tofu into 12 equal slices and put them on the silpat on my baking sheet. I used my silicone brush and brushed the marinade onto the tofu. Then I baked it at 400ยบ for 20 minutes. I took out the tofu, flipped it, spread on the rest of the marinade, and baked it for another 7 minutes. I'm very careful about how long I bake my tofu - I like it crispy/chewy, but the kiddo and husband like it softer. I think this was a good mix of the two.

And I know! I actually have so many vegan cookbooks at this point that it's hard to narrow down what to eat.
