VEW Eastern European Tofu

Tonight was the second time I made this tofu from Vegan Eats World (VEW) and its really yummy. There are a lot of more interesting looking recipes in VEW but I'm the kind of person who is always missing at least one important ingredient in a recipe. Because of this, I just served it with steamed carrots and quinoa. 

I've been in a recipe funk lately. All of a sudden it will be dinner time and I have no idea what to make. Also, I swear the kiddo gets pickier by the day and she's so limited in what she eats. This summer I will fix both of these issues! I will meal plan and make her give helpful input.
