Dreena's Cumin Lime Tofu Two Ways

So last night I decided to make some more of Dreena's food. From "Eat, Drink, and Be Vegan" I made potato smashers and cumin lime tofu. Yummy. Even the kid ate all of hers! Phew.


Today I used the leftover tofu to make a wrap. I added brown rice, sriracha, avocado, and low fat vegenaise. It was awesome (but man I wish I could eat ezekiel wraps because those are so yummy, and these gluten free rice ones are only tolerable at best. If you have tried the vegenaise/sriracha/avocado mix on your sandwiches and wraps, you are missing out.

Looking at those squashers I want to make them again soon. Who doesn't love spuds?! Glad you loved the tofu, thanks for the post Sarah. Gotta' agree with you, the brown rice tortillas need work. They are not pliable, and when you bake them, they are so tough they can break a tooth! ;) Thanks again, xx Dreena
