Hi everyone! Sorry it's been awhile but I'm here with a great mug brownie recipe that I made up today!
As is the case in my house I have tons of white flour, but my gluten free flours are limited. I improvised and it went really well!!
1 tbsp buckwheat flour
1 tbsp chickpea flour
1 tbsp cornstarch
1 tbsp hershey's cocoa
1 tbsp coconut oil
3 tbsp soy milk
2 tbsp sugar
tiny bit of salt
tiny bit of bkg soda
Microwave for one minute. Mine came out perfect! The last few mug brownies I made were like fudgy soup which is okay sometimes but not when you want something cakey.
I'm trying not to make another one RIGHT NOW!

Sounds great but is this a vanilla brownie? There just didn't seem to be chocolate added like cocoa or melted chocolate.
Aha - thanks! I forgot to put the cocoa in the recipe! That's what I get for trying to make a really quick post :) It's fixed!

I haven't decided if I love or hate you for this ;) (of course you know the real answer!) It was so yummy. I used garfava in place of chickpea because it's what I had.
