Recipe! Sarah's Gluten Free Pumpkin Oat Cake (with WW points values)

The thing about me and gluten free baking is that I never have the flours asked for in a specific recipe - but really, there are 3+ flours in each recipe - what are the odds I've spent enough money to get all of them? Slim to none. So every once in awhile I start mixing things together and hope for the best.

Today I really wanted to make and shove my face with Manifest Vegan's awesome gluten free pumpkin chocolate chip cookies. These cookies are so good that when the husband took them to work last year, no one even knew they were vegan, let alone gluten free. When I made them I didn't have any chocolate chips, but I did have some chocolate chunks so I made them like this:

Sarah's Gluten Free Pumpkin Oat Cake

1/4 c brown rice flour
2 T tapioca flour
2 T buckwheat flour
1/2 c chickpea flour (Okay, I've spaced and lost it - I cant remember if I used 1/2 cup of besan or 1 cup - I was measuring with tablespoons and can't remember! Add 1/2 cup, mix, see how it goes.)
1/2 cup oats (I used gf of course)
1 tsp xanthum gum
1/2 tsp cinnamon
1/4 tsp cloves
1/4 tsp nutmeg
1/4 tsp baking soda
1/4 tsp salt 
1/4 cup butter
1/4 cup brown sugar
1/4 cup pumpkin 
1/4 tsp vanilla extract

I started by measuring out the last of my brown rice flour and then I added other flours. Then I beat the brown sugar and butter together until it combined and fluffed up a little. Then I added the pumpkin and vanilla and mixed again. I added the rest of the dry ingredients to the flours and then poured them into the liquids. 

I had wanted to make cupcakes but the batter was a little thick so I spread it out evenly in an 8" cake pan. Then I mixed 2 tbsp of oats with 2 tbsp of brown sugar, 1/2 tbsp oil and 1/2 tsp of cinnamon and put that streusel topping on top. I baked it all in a preheated oven at 350ยบ for 15 minutes.

Okay, this is the yummiest thing I've ever made a recipe for. I highly recommend it. If you're feeling the fall love you can add some pumpkin butter on top! :D

For Weight Watchers people, this cake is 4 points a serving if you cut it into 8 equal pie shaped pieces.

My breakfast green smoothie was a "Kiwi Enjoyment" from "Green for Life" - celery, kiwis, bananas, water. Interesting, but it didn't fill my tummy or kill off cravings like the sweet kale ones do.

While fighting the want to eat a lot of food I made some juice - 3 small celery sticks, 1 small apple, 1/2 of a large beet, about 1" of ginger.

Dinner was a gluten free brown rice wrap with leftover Indian Rice and Samosa filling (from VwaV). Simple, carby, yummy.

I love how fall brings out a million gorgeous looking pumpkin recipes. Those cookies in particular have caught my eye - that big chunk of chocolate on top is really calling to me!

Yummo - pumpkin + oats are such a good combo. I reckon adding chocolate chunks would be SO GOOD :) Love pumpkin + chocolate together!!

Me too! It's harder to pretend it's healthy if there are chunks of chocolate in it though :D
