Excuses for Mustard

Photobucket

Today at the store my husband encouraged me to indulge my bad cravings - this time, Tofurky Kielbasa! I never liked animal sausage and I never miss eating animals, but I miss eating gluten a LOT. My biggest cravings are seitan/sausages and bagels.

When we got home I sliced up a sausage and put it in a pan to pan fry. Then I microwaved some leftover rice with water, steamed some kale, and got out some caesar chavez dressing (from Appetite for Reduction - it is creamy and delicious) and put together a lunch.

I called this post excuses for mustard because one of the things I miss about gluten is mustard. That might seem weird, after all mustard is gluten free, but think about what you put mustard on - sandwiches, hot dogs, pretzels - all gluten sources! So I'm always looking for ways to get in some mustard.

After dinner (okay, I'm full, but right now I have no idea what I had for dinner - I know I made a tiny green juice but after that . . . blank) I wanted some chocolate chip cookies so I started to make up a cookie recipe by putting 1/4 cup of earth balance butter with 1/4 cup of brown sugar and creaming them together - and then I remembered I used all the chocolate chips in Katie's Pumpkin Peanut Butter Cups last night (they were good but peanut butter gives me migraines, especially if it's with chocolate - so sad - I made them because the hubs wanted some and of course I ate one and got a migraine and he hasn't eaten any yet). So then I decided to wing it. I put in a tiny bit of cold leftover coffee, milk, vanilla, salt, baking soda, brown rice flour, buckwheat flour, tapioca flour, and xanthum gum and it made yummy tasting dough so I baked it and got these:

They're fluffy and yummy! They could handle some molasses, and some chocolate chips definitely wouldn't hurt, but they're good!

Tomorrow is the farmer's market, but even though it's bigger this year than last, it's still pretty disappointing - all I ever really want are some nice greens and they usually don't have any - so between that and the drive to get there, not so much. But one of the Raleigh vegans tells me there are a ton of apples (which I LOVE) at the Raleigh farmer's market, so I'll go there soon I guess.

eta: I had oatmeal for dinner! I saw an oatmeal mofo post earlier and had to have it. I used Joanna's Yellow Rose Recipes to make my oatmeal because I need a vague recipe to make oatmeal. It's true. I added flax seeds, soy milk, brown sugar, cinnamon, and nutmeg.

I totally miss bread and seitan products. I never ate a lot of fake meat but once in awhile I like some field roast. Sigh. Oh well hurts my tummy to think about it!

I was just thinking today how I just want a nice tough, cruncy, baguette... I totally miss gluten too!

Tofurky makes some pretty decent analogues. Even better with mustard. I've got to try that Cesar Chavez dressing! I've heard really good things about it.

I didn't miss mustard nearly as much until I read your post. I do like it on sunshine and black bean burgers though.
That kielbasa looks so good.
