Birthday Cake

On Friday my baby turned 6! I can't believe how fast time goes! 

The cake recipe I used this year was the basic Wilton yellow cake recipe and I substituted 1/2 cup of applesauce for the 2 eggs they asked for in the recipe. I made it in my 8x3" cake pan so that I could make one layer and split it in half, but then it took so long to cook through that the top of the cake got a bit tough. Because we were so busy running around I didn't have a lot of time to frost it and I was going to do it the day after her birthday (she's not really one for sweets - said she wanted triscuits for dessert!) but her dad insisted and played her new Monopoly Junior game to keep her occupied while I made frosting and frosted the cake real quickly. I'd wanted to make it neat and perfect and it came out okay, but not as perfect as I wanted, partly because the frosting was a tiny bit too thick to make letters with and I didn't want to take the time to thin it out and fix that.

The cake was eaten about 4 hours after I took it out of the oven and it was pretty good but the leftover cake the next day was even better - too good, actually. I am powerless against cake. And frosting. It was easy for me to go vegan because to me animals weren't ever really food but it's hard to stay gluten free because to me gluten is still food, even when I tell myself it isn't. Alas. A work in progress!

The cake I made was better the next day too! weird. I wonder why? The first day it tasted old fashioned, and a little soda-y..but once it sat for a few days it was really quiet a good cake!

Kirsten - so weird! I saw Bobby Flay once tell cupcake people their stuff should always be fresh made that day but I often find next day stuff to be yummier.
