Morning Microwave Oat Muffin

Last night I made Chocolate Covered Katie's Single Serving Mocha cake (without the coffee) and it reminded me that I have had some luck in making up recipes for baking. With that in mind I decided to make up an oat based snack for me for breakfast.

I didn't take a picture because I was too busy eating it, but it was really yummy. Here's what I did - in a coffee mug I combined:

2 tbsp gf oats
2 tbsp bob's ap gf flour
1/2 tbsp oil
1 tbsp silk creamer (we're out of milk)
1 tbsp suar
one pinch each salt and baking powder

I stirred it together well and then microwaved it for 40 seconds and bam. A yummy, quick breakfast appetizer (let's face it, there's no way that's enough food for me for breakfast). I followed it up with some grapes.
