GF Cranberry Bread

I don't know about you but I love cranberry bread and I stockpile cranberries and keep them in the freezer. Because I'm moving soon (in 2 months, back north to the seacoast ME/NH area - let me know if you have a job or a rental to tell me about!) I decided it's time to start using up foods. First up, my 18 month old cranberries! 


I made the Veganomicon recipe about a year ago and next to it I'd written "more orange, less sugar" so the other day I made it with a few changes.


1. I used the rind of one whole huge orange instead of the 1 tbsp asked for
2. I used 1/2 cup of sugar instead of 1 cup
3. I substituted the flour with Bob's Red Mill Gluten Free All Purpose Flour


It was amazing. The texture was like a regular quick bread and it was tart and perfect. Sorry for the blurry picture - my camera and the light and I weren't getting along.

you're welcome and thanks for the comment! i love when stuff gluten frees easily - mixing flours and xanthum gum and all that is just too much some times :D
