For a couple of months or so I had Monday scheduled as pizza day. Every other week I'd make Isa's Pizza Dough from Vegan with a Vengeance and I'd freeze 1/2 and use 1/2. Of course this meant that I got to eat something super healthy that I like and no one else would eat or that I got to be sad I couldn't eat pizza. Two weeks ago I used eggplant and made that my crust! I topped it with sauce (Newman's Own) and some mozzarella Daiya. It wasn't exactly the same, but the warm cheesiness made me happy and I didn't feel guilty for eating it after. Win win!
I've since canceled pizza day because the kiddo wouldn't eat it anymore - whatever!
