Two New Cupcakes!

New to my house, that is. I got to go to a Cassandra Clare signing last week - she's a YA author who has written the awesome Mortal Instrument Series and the prequel, the Infernal Devices series. The latter is based in England so I decided to make the Earl Grey cupcakes from VCTOTW. Something bad happened (I used milk instead of yogurt - it's really hard to find vegan yogurt in this town) and they came out gummy and not good - they tasted great (I don't even like to drink Earl Grey!) though so I tried again. This time I used the cupcake recipe from Robin Robertson's 1000 Vegan Recipes but altered it a bit. I heated the milk and added 1 Earl Grey teabag and 1 Lady Grey teabag (I'd run out of Earl Grey) and then when it cooled I added the apple cider vinegar. For the frosting I used the frosting recipe in 1000 Vegan Recipes and I added some orange and lemon zest. Perfect.

Yesterday I decided to use the last of my agave on the VCTOTW Agave Cupcakes. I used the modification in the book to make them chocolate, and when I ran out of agave I used about 2 tablespoons of brown rice syrup. I decided to make the peanut butter frosting (with molasses because I don't have malt syrup) and they combined to make what is likely the best cupcake I've ever made. So good.
