XGFX - Mustard-y Fried Tofu and Blondies

Photobucket

Tonight for dinner I made RayRay's mustard-y fried tofu except I did my gluten free version. This tofu is the favorite tofu of my kid, my husband and me - it is SO GOOD. I'm pretty excited that I managed to gluten free it successfully.

Here is the recipe I used - halved and xgfx'ed.

Dry Mix:
1/2 tsp. salt
1/4 tsp. onion powder
1/2 tsp. pepper
1/2 tsp. garlic powder
1/3 cup chickpea flour (besan)
2/3 cup brown rice flour
2 tbsp nutritional yeast

Whisk dry mix together.

Wet Mix:
1 1/2 tbsp yellow mustard
1/3 cup water (sometimes I add more if it seems too thick)

Whisk wet mix together and then add 1/3 cup of dry mix to the wet and whisk. Add 1 tbsp. baking powder to dry mix.

Dip tofu into wet mix and coat, then dip into the flour mixture to coat. Place into hot oil and fry until desired doneness (my husband likes his more done and darker brown, the kiddo and I like it a little less done).

Here is the kiddo's plate of tofu with french cut green beans and white rice.

Then while rearranging the freezer I saw the back of my Bob's Red Mill Gar-Fava flour had a recipe for blondies so I made those too. They're yummy but I don't think my stomach likes gluten free flours much more than gluten.

The tofu looks superb! I wonder how well that would transfer to baking versus frying? Might give it a try and check it out :)
