Tofu Scramble for Mofo, take 2 & Tamale Pie

This mornings breakfast plan was a kale smoothie but when I found myself starving and craving scramble, I made it happen. I didn't use an exact recipe but I did use my last serving of the pre-made YRR scramble spice mixture.

I started with olive oil, garlic and onions and then added the spice mixture and then the tofu. After that I added some chopped up broccoli (I love broccoli in scrambles).

When it was all done I added some lemon juice (added from my cool new lemon reamer from Target)

and then I added gobs of nooch and tada!

For dinner I made the YRR Tamale Pie, sans extra protein source. It was feeling a little plain because of that so I added some crumbled fritos on top :D

I don't think I've ever tried broccoli in a scramble before. Must get on that!
