Jackfruit Carnitas & Taco Salad

The other day I decided it was finally time for me to try Melisser's jackfruit carnitas. I've been trying to use my slow cooker more lately and I had a can of jackfruit in the pantry (thanks to Erin!) so it was clearly time. 


These were pretty good - I definitely liked them more than I thought I would. Unfortunately I was feeling pretty lazy so I just put them on some store bought corn tortillas with some of the YRR sour cream dressing. I think that with some more toppings and on crunchy shells I would have really liked them.

That was a few days ago but today I had the YRR taco salad for the second day in a row! I took a picture this time but I didn't have any colorful toppings, so it wasn't as interesting looking as usual, but it's always yummy!

I've never seen jackfruit here but as soon as I find some I'll be snapping it up to make the carnitas.

Looks good! Also, I love the lighting in your kitchen. I keep thinking about how I wish my kitchen had more natural light. It's especially bad in the fall.

Mo - I take most of my kitchen pics on the corner of the table closest to the sliding doors and I take food pics in like 3 different camera settings and then pick :D
