MoFo, Day 1!

Okay, so it's actually 2 hours before day 1, but I have a cold incoming, and in case it's suddenly horrible tomorrow, I don't want to miss my first day!


I'll start this off with a raw vegan gluten-free parfait! This is from Ani Phyo's "Ani's Raw Food Kitchen" book - it's buckwheat crunchies, cashew coconut pudding and fresh peaches!

I wasn't sure how I'd feel about this but it was yummy and pretty filling - a success!

K - it's actually really easy! The buckwheat crispies are made by soaking overnight and dehydrating and the pudding is basically cashews, coconuts and agave food processed together (and chilled to let it mingle and whatnot).

I'm a fan of that parfait. I haven't made anything from that book in a while. I should probably pick it up again because I remember liking a lot of stuff.
