Thanks!!K - it's actually really easy! The buckwheat crispies are made by soaking overnight and dehydrating and the pudding is basically cashews, coconuts and agave food processed together (and chilled to let it mingle and whatnot).

I'm a fan of that parfait. I haven't made anything from that book in a while. I should probably pick it up again because I remember liking a lot of stuff.
