Pepperjack Daiya Love

I finally found some pepperjack daiya and I was having one of those days (PMS/Heat related migraine, so, hell, basically) and I caved to my new cheese.

Quesadillas! Two white corn tortillas, daiya, dry calphalon pan. Yummy.


Fajitas! Portobello mushrooms with chili powder, onions, green peppers, white corn tortillas, daiya, franks.

Looks fine! and very tasty! in Spain, I can't find any of these ingredients, I have to look any further!

I am a big fan of Daiya pepperjack cheese. I usually just have it melted on Ezekial tortillas with jalapenos (and occasionally avocado), but your creations look really special. Happy vegan eating!
