So the GF thing is going well. My migraines occur much less frequently and I feel less foggy and scattered and my IBS issues seem almost entirely resolved. Wow.

Another omelet - daiya, mushrooms, tomatoes and spinach - yummy!
Tempeh Scramble from Vegan Brunch! I've realized I'm note ating nearly enough tempeh so I'm trying to fix that. It's a precious commodity around here - hard to find. The overpriced HFS is frequently out but I realized Harris Teeter sells it (though only the 3 grain and the soy) for $2.49. Otherwise, to Raleigh I go.
The Veganomicon Tomato/Rice/Bean soup. The kiddo's eating it! Woo!
Dal soup! Because even though I want to, I can't go to the Indian Buffet every day. The first time I went there, they had a dal soup that was so good I wanted to eat only that forever. It wasn't quite as good last time, but their food is so good! Here's mine.
I'll work on specifics, but the recipe is basically:
1 cup split yellow mung beans
3 cups broth
3 cups water
2 carrots finely diced
1 tomato finely diced
That part is definite but I have to remember all the spices I used and how much of each. I used:
ground coriander
cumin seeds
fenugreek
turmeric
... and I forget what else. I used 1/2 to 1 tsp of each.
At the HFS yesterday I got me and the kiddo some Sweet and Sara goodies (I can't believe my lousy HFS actually sells them!). I got the kiddo a snowman and the rocky road bark for me - SO GOOD.

Very nice dishes! If you could post particulars of how much cumin, fenugreek, etc. to use for the Lentil Soup, that would be awesome.
