What to do with my treasured kale?

Ever since moving to NC I have had the WORST time finding kale. In chatting with some people, I've come to realize that this is a bigger problem where I am (Fayetteville) than in other places, like the Raleigh area. The only kale I can find is curly kale at the commissary and it's usually wilted and slightly yellow and never ever organic. 

My recent trip to Raleigh included Trader Joe's and Whole Foods. Of course WF had the green curly kale and the red/purple curly kale and dino kale, and I got some dino kale. So what to do with my special kale? I finally decided to retry the Vegan with a Vengeance Garlicky Tahini Sauce (I've made it a few times and never really loved it but I'm not sure why because I generally like tahini so there's no reason I shouldn't like it). So my helper chef Livi helped me make the tahini sauce and I was feeling lazy this time so I left the garlic out. Then I decided to steam my kale and I don't usually steam kale - I usually saute it. 

Now, I don't know if it's because it's the dino kale or because I steamed it or both, but I thought that even just the plain steamed kale was REALLY good. I dry sauted some boiled seitan and served that next to some of the kale on top of some brown rice and topped it all with the tahini sauce and it was SO GOOD.

Kiddo had the plain boiled seitan, rice, and she ate a good size serving of kale! Woo!

Thanks for the post, that looks delicious! I have never had Kale before, but I was just reading about it on a blog called capturing happiness, I might have to try it now!

I really love that sauce! Glad you liked it this time. Also, I can't imagine having a hard time finding kale. It's something I worry about.

I love the garlicky greens and tahini sauce too--I like it with brown rice and roasted chickpeas!
