Mofo Dinner #1
Earlier today I threw some tofu in my tofu press (thanks again Lemon family! <3) with no idea what I wanted to make for dinner. I find that there are some days where I know what dinner is before lunch, but most days I find myself at dinner time with no idea. I think that this is due in large part to the complication of feeding a picky 4 year old.

So at around 5pm I took the tofu in the tofu press out of the fridge and I had this:
At that point I opened the fridge and picked out the asparagus kiddo insisted we buy when we were shopping yesterday. I snapped off the ends, threw them in the colander, and rinsed.
I threw them in a pyrex dish and mixed them with some apple smoked salt and olive oil. Then I decided to bake my tofu (I say bake MY tofu because kiddo likes her tofu plain - blech - so I always prepare 3/4 of the block and give her 1/4 of the block cubed). I took out another baking dish and added some braggs, olive oil, balsamic vinegar, veggie broth, and herbs (rosemary, oregano, basil). I mixed them all in the dish and then added the tofu.
I messed with my baking time a bit because of cooking the asparagus at the same time and because I got hungry, but it was cooked at 425-450ยบ for 20 minutes or so, flipped, and then for 15 or so minutes.
Dinner! Served on top of leftover brown rice.
