My new magical lazy/easy tofu is helped along by the fact that some of my awesome friends bought me a Tofu XPress!
For my super lazy tofu, I press the tofu for as long as possible (I usually use House brand Extra Firm Tofu which is $1.21 at the commissary (sometimes $.98!!)), 30 minutes to overnight or a little longer. Then I cut it into the thinnest slices I can cut and I dry saute them in my non stick Calphalon (thanks again Dad!).Once they brown up a little on one side I flip them and let them brown up on the second side. Once that is done, I add a tiny splash of braggs, sometimes I add a tiny bit of olive oil, and then I sprinkle one of those salt-free seasonings on top and flip them again for a little bit. This way the tofu is crisp and flavorful - yum!
The kiddo won't eat it this way yet - she still prefers her tofu plain - blech.

I must confess; I haven't eaten tofu in at least 6 months...maybe longer. I miss it.
