I finally re-realized that Silk makes my stomach hurt. So long silk creamer! Sniff. Especially since I finally realized it's $1.09 at Target! And the coconut creamer is $2.99 at the lame, overpriced health food store. So I'm using some 8th continent again.

Yesterday I went grocery shopping, spent $90, got home, and realized I didn't have that much in the fridge. How did that happen? Here's a list of stuff I have on hand - meal ideas appreciated! Meals for one adult and one kinda picky preschooler (I realized she isn't a toddler - gulp!)

I'm so sorry about your husband's deployment. If I come across a big bag of cash, I'll send some your way :)

It looks like you have the makings of a pretty mean lentil loaf, which makes great lentil loaf sandwiches as left overs :)

Karen - Current payoff amount is $200 but if we pay through the end of the loan, that's just under $600. I can't imagine the money wasted. Other people should be warned. Also, how's this: http://www.firedupmissouri.com/talent_graves_pay_to_play ?

I would (and am about to) make the french lentil soup with tarragon and thyme from VCon. It's really good and my 2 year old loves it. It also looks like you could make some refried beans with rice. Or chickpea salad, or snobby joe's.

If you figure out something to do with millet or amaranth tell us, I never know what to do with it!

Rach - There are actually some good amaranth recipes in Robin Robertson's 1000 Vegan Recipes - I made an amaranth patty that was super yummy!

I'm getting a new camera soon - the current one doesn't seem to take good pics anymore - and there will be more pics then.

Looks like you have everything in your house I would normally buy for my preschooler and toddler! Word of advice from my own experience....I have a very picky toddler, so I got the idea to start buying a few different varieties of pre-made canned soups. I serve them up for lunch and when I find one they like I try to make big batches of it homemade to try to mimic the tastes they like. That gave me a better handle on what my son would actually eat without having to buy a bunch of ingredients or waste any food.

I promise I'm not stalking you! I just saw your blog and remembered that you were in NC. We just moved to Ft. Bragg a couple months ago! What health food store were you mentioning? I have only found one so far, and it was pricey! I didn't get anything!

Sorry you had to just move to a new place and your husband turned around and deployed! Have you made a lot of friends yet?

Luckily, we already had a lot of people from previous assignments and old friends that lived here. Small world. I hope you find some yummy things to make out of your ingredients... Sorry, I have no exciting ideas!

Wanna be - Stalk away!! :D I scared away a new vegan at Ed McKay used book store because I was so happy to meet a vegan here - ha! Anyway. We've been to the Apple Crate on Raeford and they're the overpriced ones we go to. There's another Apple Crate in Hope Mills but I figure it can't be better and there's a Healthwise that SUCKS - it smells bad, it's overpriced, and the last time I was in there they stayed in back the whole time. Also, no friends!

I agree about Healthwise. I've only been there twice. They had a can of nutritional yeast for $13 or something that sold for $9 at the Apple Crate. I told Healthwise about this; they didn't seem to care. Maybe they are independently wealthy?

The Apple Crate in Hope Mills is much smaller than the Raeford Rd. one and sells mostly supplements and gluten-free stuff. (They have a Bangkok Express next door where I go for lunch sometimes. The owner is so nice, and he makes me Panang tofu with no fish sauce. It's not the best Thai food I've ever had, but it beats Taco Bell by a long shot.)

Do you know of any salvage grocery stores in town? I've realized I need to start saving money, and so I go to an Asian grocery store for tofu. The place I go charges $1.59 for a 16 oz. box. It's not organic, but it still beats $2.99 for 14 oz...They also have soba noodles for $2.99 for 2 pounds.

Hey Vicki! I get my nooch at Vitamin Shoppe! WAY cheaper.

I don't know of any salvage type stores, but The Mediterranean Mart on Cliffdale off of Skibo has herbs and grains and beans cheap. I get my tofu at the South post commissary - it was $.98 for awhile and is now still only $1.21. What Asian grocery?

I go to Pan Market. It's on Hope Mills Road in the strip mall with the Boy Scout store and a mattress place. Thanks for reminding me about Mediterranean Mart!
