So in the midst of another reattempt at Raw (I even got to meet Dhrumil Purohit and Philip McCluskey the other day!) I made baked tofu that smelled so good, I decided to eat some. And I'm going to tell you how!
I make my tofu in a 9x13 glass pyrex, and I do it lazy style - that is, I dump everything into the pyrex, whisk, and add tofu.
Today's tofu:
Pinch each of dried oregano, basil and rosemary.
Tablespoon each of oil (I used canola cause I'm low on olive oil) and balsamic vinegar
About 3/4 cup of veggie broth
Then I put the thinly sliced tofu (I got 12 slices out of a block of tofu which is now $.98 at the commissary!) in it. I baked that at 400º for 20 minutes and then turned it to 425º for another 20 minutes.
SO GOOD! I ate mine with asparagus and brown rice, and the kiddo and husband ate theirs with white rice and asparagus.

i never make tofu but i made that and it turned out great! but i kinda want a tofu press to make it like WF's gets theirs...dense, but not hard. I hate soft tofu!

Averie - Looks good! I'd have to use a different oil though - I've recently realized I don't like toasted sesame oil! I don't know why because I love most things sesame.

Baked tofu is just wonderful- There are so many ways to flavor and serve it! I like your approach, the combination of herbs sounds wonderful.
